Ever since I did this Pumpkin post over on Pennies and Blessings, I have been in a pumpkin mood…
So when I saw this recipe for Pumpkin Ice Cream in Gooseberry Patch’s Sweet & Simple I knew I had to try it!
I mean, three ingredients and no need for an ice cream maker?!?!
First you take your favorite vanilla ice cream or frozen yogurt. I absolutely LOVE the Homemade Vanilla frozen yogurt Blue Bunny makes… so I used it instead of ice cream.
Soften your ice cream a bit… I just took advantage of using it after a hot car ride home from the grocery.
Throw it in your mixer.
1/2 teaspoon of pumpkin pie spice
Pour into a freezer friendly container and freeze until set…
Scoop up and serve with gingersnaps…
Or make little ice cream sandwiches… yum!
I am thinkin’ this would be great with pie crust cookies too…

Ingredients
- 2 Quarts Favorite Vanilla Ice Cream or Yogurt-softened
- 15 oz Can of Pumpkin
- 1/2 t. Pumpkin Pie Spice
- Garnish with Gingersnaps or Pie Crust Cookies
Instructions
- Combine ingredients in mixer until well blended.
- Pour into a freezer safe container and freeze until set.
