Chocolate Walnut Brownie Cake

Dear Reader,

When Hodgson Mill asked me to enter their recipe contest, I instantly thought of our family’s favorite brownie cake.

This yummy light and fluffy “brownie” has a very unique flavor due to a secret ingredient ;) and always goes over well at gatherings.

So, I tweaked my recipe ever so slightly to use a mixture of Hodgson Mill’s Whole Wheat Flour and White Flour and the verdict is in… the family LOVED it.

Start out by melting 2 sticks of butter in a saucepan.

Add in 1 Cup of Water

and 1/4 Cup Cocoa

Bring to a boil and then set aside.

Now take grab the cutest 4 year old you can find and have her take 2 Cups Sugar and 1 t Baking Soda…

And mix it with 1/2 Cup Hodgson Mill Whole Wheat Flour and 1 1/2 Cups Hodgson Mill White Flour

And then add our very special secret  ingredient… 1 T Cinnamon and blend well.

Add 2 eggs

1/2 Cup Buttermilk

And 1 T Vanilla

Mix well  and add in the cocoa sauce with an electric mixer for about 2 minutes on medium speed.

Pour the batter into a lightly greased 11 x17  cookie sheet.

Bake at 350 degrees for 20 minutes.

Meanwhile, take a stick of butter and melt in a sauce pan.

Add 1/4 Cup Cocoa

Add 1 lb Powdered Sugar and 3-4 T Water. Bring to a boil.

Take 1/3 Cup of Chopped Walnuts and toss into icing.

Once the cake is done, add the icing while still warm.

Spread the icing…

Then add another 1/3 Cup of Chopped Walnuts on top.

Let cool completely before serving.

  • Icing:
  • 1 Stick Butter
  • 1/4 Cup Cocoa
  • 1 lb Powdered Sugar
  • 3-4 T Water
  • 2/3 Cup Chopped Walnuts- Divided

Instructions

  1. Take 2 sticks butter and melt in a saucepan.
  2. Add water and cocoa and bring to a boil and set aside.
  3. Mix flours, baking soda, sugar and cinnamon.
  4. Add Eggs, Buttermilk and Vanilla. Mix well.
  5. Add in Cocoa sauce and mix well with an electric mixer for 2 minutes.
  6. Pour batter into a lightly greased 11 x17 cookie sheet.
  7. Bake at 350 for 20 minutes.
  8. Prepare icing:
  9. Melt a stick of butter.
  10. Add Cocoa, powdered sugar and water.
  11. Bring to a boil.
  12. Add 1/3 cup of nuts.
  13. Pour icing over warm cake.
  14. Top with remaining nuts.
  15. Cool completely before serving.

    This looks amazing! Did little Miss Add get to lick the batters? We always did that when I was a kid. Then I married my husband whose mother always told them they’d get worms and die if they licked the batters. :-) Probably not a good idea, but it sure was a fun thing to do while it lasted, and I’ve survived all these years! This cake looks like a definite-make over Christmastime.
