Crockpot Meatloaf – Quick and Easy

Dear Reader-

While researching my 17 More Ways to Use a Crock Pot post, I came across a fellow Hoosier’s recipe– Jen over at 4tunate. She made meatloaf in her slow cooker and it really got me thinking of how to convert one of my recipes to the crock pot…

So I did…

And now, I am pretty sure it will be my go-to method for meat loaf.

I really like that I can put it on and let it cook for a few hours without having to babysit it the way I do the oven.

Truth be told, the recipe I used in the crock pot is very similar to My Awesome Meatloaf… with a little addition.

Crockpot Meatloaf

Start with chopped onion… we used A LOT… you will probably want to go with about 1/2 of a medium onion.

Add 1/4 Cup Chopped Red Bell Pepper

Add 1 lb Extra Lean (or your preference) Ground Beef

1 1/2 t Chili Powder… we LOVE Penzey’s Con Carne

1/2 Sleeve Saltines- Crushed…

Salt and pepper to taste… but don’t taste it, k…

I know that sounds silly, but I have seen sillier things this week ;P

Add 1/2 Cup Ketchup

And 2 eggs

Now mix ‘er up… If you hate this part… you gots to get you one of these!

Now I take mine and press it in my 2 qt interchangeable bowl (after lining it for easy peasy clean up!)

Top with Ketchup (again to taste… but again… not recommending eating raw meat ;)).

Now I cooked mine on High for 2 1/2 hours and it was done perfectly.

Crockpot Meatloaf- Quick and Easy

Ingredients

• 1/2 Medium Onion- Chopped
• 1/4 Cup Red Bell Pepper- Chopped
• 1 lb Ground Beef
• Salt and Pepper to taste
• 1 1/2 t Chili Powder
• 2 Eggs
• 1/2 Cup Ketchup
• 1/2 Sleeve Saltines- Crushed
• Ketchup for topping

Instructions

• Mix everything except topping.
• Press into a lined slow cooker and top with ketchup.
• Cook on high for 2 1/2 hours
