Crockpot Crustless Pumpkin Pie

Dear Reader-

I have a dilemma. I really, really heart pumpkin pie. And if you had asked me before trying this Crustless Pumpkin Pie (in a crockpot!) if I’d ever be willing to give up the crust I would have looked at you like you were crazy.

Now don’t get me wrong… crappy crust ruins a GOODe pumpkin pie… but oh– a GOODe crust makes it even yummier.

Enter this recipe (Pumpkin Pie Pudding) in Gooseberry Patch’s new Slow Cooking All Year ‘Round. (Psst… Have you entered to win a copy yet?) and I am more than willing to forgo my crust. Just. Like. That.

This recipe is so delectable and simple pumpkin perfection.

When I made this for some guests a while back it was the talk of the night. We were all prepared to go crustless forever.

Pretty powerful pumpkin, huh?

You start by combining 15 oz Pumpkin and 3/4 Cup Brown Sugar

Add 1/2 Cup All Purpose Flour, 1/4 t Salt and 1/2 t Baking Powder

Add 2 T Melted Butter

And 2 Eggs- Beaten

2 t Pumpkin Pie Spice

And 12 oz of Evaporated Milk.

Then stir well and pour into your crock.

Cook on low for 2-4 hours or until set– turning crock as needed to “bake” evenly.

Spoon out and serve with Cool Whip or Whipped Cream.

Crockpot Crustless Pumpkin Pie

Fantastic Crustless Pumpkin Pie in the Slow Cooker from Gooseberry Patch's new cookbook Slow Cooking All Year 'Round.

Ingredients

  • 15 oz Pumpkin
  • 12 oz Evaporated Milk
  • 3/4 Cup Brown Sugar
  • 1/2 Cup All Purpose Flour
  • 1/4 t Salt
  • 1/2 t Baking Powder
  • 2 Eggs- Beaten
  • 2 T Butter- Melted
  • 2 t Pumpkin Spice

Instructions

  • Combine all ingredients in a crockpot and cook on low for 2-4 hours, rotating crock to cook evenly.

    This sounds delicious! I’m going to try and modify it for weight watchers…I’ll let you know how it goes. They have a crustless recipe that is similar.
