Mini Pie Bites

Do pie preferences diverge in your family like mine? Does Mom like Cherry but Dad detests it? Does Papaw love Peach but Dad prefer Apple? These Mini Pie Bites are a perfect solution for pie peace at your next family gathering… as long as you make a double batch, because these babies go fast!

This fantastic idea comes from Krissy (LOVE the name ;)) Mosqueda of Houston, TX in Gooseberry Patch’s new Game-Day Fan Fare Cookbook.

I just love it.

Mainly because it meant I could FINALLY have my Cherry Pie and eat it too. Ya see, at our house, Daddy doesn’t like Cherry and when we go to Papaw’s he is crazy about Peach Pie…

And since these days I am certainly not in the market for eating an entire Cherry Pie all by my lonesome, I usually opt for none.

But these little pies are the perfect solution to my pie plight.

Cooking with Kids

So I grabbed my best baking bud and got at this fun recipe for our Easter feast a while back. Truth be told, I was a little worried the tininess of the pies would make for a mess, but my girl actually showed me up in the pie department… she was so GOODe at it and oh-so proud when she share her Peach Pies with Papaw.

And the recipe? So simple!

We just took a pre-made pie crust (if you’d prefer homemade, check out this easy homemade pie mix and rolled it out a bit and then cut it into 12 square-ish like pieces.

Then we grabbed our favorite fillings and placed a teaspoon or two of the filling into each square and pinched them shut.

Then each pie goes into a muffin tin. (And repeat the process with your other crust.)

Now I know what you are thinking… those babies are gonna stick!

Nope. Or, at least mine didn’t.

They popped right out.

Once the pies bake at 450 for 10-15 minutes, pop them out and let them cool and mix up the icing (1 Tablespoon Milk with 1/2 Cup Powdered Sugar).

Then just drizzle those babies with icing and let it set.

Then WATCH out! They will fly off the plate.

Mini Pie Bites

Versatile Mini Pie Bites allow everyone to have their favorite flavor at your next family gathering. Found in Gooseberry Patch's Game-Day Fan Fare

Ingredients

  • 2 Pie Crusts Dough Rolled Out
  • Favorite Pie Fillings Approximately 1 Cup
  • 1/2 Cup Powdered Sugar
  • 1 T Milk

Instructions

  • Roll out pie crusts and cut each into 12 square-like pieces.
  • Add a teaspoon or two of your favorite filling to each square and pinch shut.
  • Place each pie in a muffin cup and bake at 450 for 10-15 minutes or until golden.
  • Cool pies and then drizzle with icing mixture (Powdered Sugar and Milk)

    How long in advance can you make these? They look great , but I was wondering if they would store as a make ahead item? Thanks for sharing!

      I made these the night before, but I bet you could freeze them.

    Hi cute idea, but I wonder if the pie dough would overpower the filling and does the filling dry up some since there us so little of it?they look yummy.
