Are you looking for a quick and easy recipe that cooks while you do more important things this summer? Forego heating up the kitchen this summer with this Cheesy Crockpot Chicken, the perfect dish for busy summer schedules.
I see these moms who have a good, home cooked meal for the families every night.
I am not one of them… by far.
We have sorta gotten in a rut around here. We have a few quick and easy meals that we seem to make again and again and again.
In a conversation with Cris, cooking was mentioned. I laughed and told her that I barely had time to cook (we have three yards to mow this summer, and it usually doesn’t go smoothly), much to Michael’s disappointment. Then my brilliant sister reminded me that my Crockpot could help me with this problem.
It was seriously a hit my forehead moment. Why had I not thought of this?!
First up to help out all you Momma’s out there that are having a hard time (like me!) getting a good meal together for your family is a recipe I found in Gooseberry Patch’s Super Fast Slow Cooking… and it is SO good!
Cheesy Crockpot Chicken
This is so easy it is ridiculous, so I love it! Time saver tip: If you are going to throw it together in the morning before work, I would thaw your chicken breasts overnight in the fridge.
Take your 6 boneless, skinless chicken breasts and place them in your slow cooker.
Sprinkle them with garlic powder, salt and pepper…guestimate what you think is good, don’t taste it now… tasting raw chicken is a VERY bad idea, just sayin’.
Next mix all your soups together, pour it over the chicken and turn your slow cooker on low.
Leave it alone for 6-8 hours…I turned ours off at 7 hours and it was wonderful! Flavorful and juicy…perfect!
Serve over rice.

Made this tonight for myself and my husband. The chicken turned out wonderfully tender and the sauce was so tasty. We absolutely loved it. Thank you so much.
