Pork chops and scalloped potatoes. Two of my favorite foods together in the crockpot…pure genius! Why had I never thought of this?
Well, I am sure glad Barb did in Gooseberry Patch’s Super Fast Slow Cooking!
Now here’s the thing…I am a TIDBIT slow when it comes to prep. If a recipe says it takes 20-30 minutes to prep, you can bet your bootie that it will take me no less than an hour.
My dear older sister says it is because I am too much of a perfectionist. She has a good chuckle when we cook together…she has such finesse when it comes to prepping ingredients…whereas I…umm…tend to concentrate a little more. And when there are onions involved, I tend to run out of the kitchen convinced the burning sensation will never stop! Ah well…we all have our burdens to bear.
The reason I am telling you this is because I’m not quite sure how long to tell you the prep on this one will take. For me and my lack of finesse, it took around an hour to prep and put it all together, so I am guessing for the normal person, it will take 20-30 minutes. 😉
Now on to the recipe.
Slice up an onion…and try not to run out of your kitchen and scare your one year old.
Slice up your potatoes and cheese.
Spray your crockpot with cooking spray, then layer onions, potatoes, cheese and repeat, repeat, repeat until your crockpot is 2/3rds full or you run out of ingredients…luckily that was the same point for me.
Shake a little salt and pepper on top of your pork chops and place them on top of it all.
Next take your soup and coat the chops. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Crockpot Scalloped Potato Pork Chops
Ingredients
- 1 onion
- 8 potatoes
- 16 oz of Velveeta or equivalent
- 6-8 boneless pork chops
- salt and pepper
- 10 3/4 oz can of cream of chicken soup
Instructions
- Spray crockpot with cooking spray
- Layer onions, then potatoes, then cheese
- Repeat until crockpot is 2/3rds full
- Lightly salt and pepper pork chops
- Place on top of ingredients in crockpot
- Spread soup over top of all pork chops
- Cover and cook on low for 6-8 hours or 3-4 hours on high

I find this recipe delicious. Though, I do not salt the pork chops as there is plenty of salt in the rest of The ingredients. Of course, potatoes onions do not have salt
