Are you in love with ranch like me? Then you absolutely must try these Crispy Ranch Pork Chops I came up with today. They definitely need to go on your “can make in a hurry” list.

There I said it.

Mom and Cris can come up with a recipe off the top of their heads.

Not me.

I have called them in a panic before when I have thawed some kind of meat from the freezer thinking I could find a recipe that was quick and coming up with nothing. They have both calmly rattled off a list of ingredients of things I had in my cabinets and a list of directions. They have yet to come up with a recipe for me in those situations that isn’t fabulous.

I can even remember going to a restaurant with Cris and Mike and having a delicious dish. They would then go home and figured out how to remake it just by how it tasted. How did they do that?!

Well, the question of “what’s for dinner” came up again tonight (don’t you just hate how that happens every single day! 😉 ).  I had been distracted by various chores around the house today and it had gotten so late that I needed something quick. I scanned through my cookbooks and saw a chicken recipe that used corn flakes as a breading. I had some corn flakes left over from this yummy Slow Cooker Bunch of Crunch Candy, but I didn’t have the right kind of chicken.

I knew we had a couple packs of pork loin pork chops in the freezer from an awesome sale on Friday and wanted to use them anyway…but how was I going to make them?!

Then inspiration struck. These Creamy Ranch Crock Pot Potatoes have me obsessed with any recipe involving a ranch dressing/dip mix, and I had those corn flakes were just sitting in the cabinet. So why not make up my own recipe!

Now granted, I wasn’t all the confident that my first attempt would go too well and had to make a call to Cris to get some big sister reassurance. I am sooooo glad I went for it! These Crispy Ranch Pork Chops are not only super easy to make, they are awesome! (Even if I do say so myself!)

Crush up some corn flakes until you have 2 cups. It ended up being around 4 cups of uncrushed flakes for me.

Mix in one package of ranch dressing/dip mix.

After you have the dry ingredients well combined, drizzle your oil all around the bowl.

Stir this mixture until the oil is coating everything. (I would recommend putting a little aside to give a try. Michael and I both were drooling over the bowl of breading after I had already coated the chops. But we refrained from digging in since it did just have raw pork in it. 🙂 )

In a separate bowl, whisk up one egg with your water.

Take a chop and coat both sides in the egg and water.

Put your chop in the breading mixture and coat liberally on both sides. Be sure to press the breading into the chop and then add a little more.

Place the chops in a greased baking dish and cook on 450 for 20 minutes.

We absolutely loved these Crispy Ranch Pork Chops, and I was pleased as punch that my first time time creating a recipe was a success!

Ingredients

  • 6 pork loin pork chops
  • 2 c crushed corn flakes
  • 1 ranch dressing/dip mix packet
  • 1 1/2 T olive oil
  • 1 egg
  • 1 T water

Instructions

  • Crush up corn flakes until you have 2 cups (approx 4 cups uncrushed)
  • Mix in one package of ranch dressing/dip mix until well combined
  • Drizzle oil all around the bowl and stir until mixture is well coated
  • In a separate bowl, whisk together egg and water
  • Take a chop and coat both sides in egg mixture
  • Put the chop in the breading mixture and coat liberally on both sides
  • Press breading into chop and add a little more
  • Place the chops in a greased baking dish
  • Cook in the oven on 450 degrees for 20 minutes
