Tonight I have a rare treat where I am going to share a yummy recipe from a brand new yet-to-be released cookbook BEFORE I even get around to the giveaway and book review…
Ya see when I mentioned this yummy Slim Down Soup on Facebook the other day, a lot of you were very interested in the recipe ASAP…
I was cooking up a batch as a part of my Early Bird Review of Gooseberry Patch’s brand new- not yet in stores- cookbook, The Harvest Table.
And, while I am almost ready to write up my review and hold a giveaway for a copy, I thought I’d go ahead and share this recipe.
The recipe calls for 4 cups water, but I always substitute broth for water in my soups… so I used 4 cups Chicken Broth.
I poured it in my favorite Soup Everything Pot and got down to business.
I added one envelope of Onion Soup Mix– a total pantry staple at this house!
Then my seasonings… 1/4 tsp Salt
1/4 tsp of Pepper
and 1/4 tsp very blurry Garlic Powder
Chop up and add 4 Ribs of Celery
2 Carrots or a handful of baby carrots– again, chopped…
A small head of cabbage– chopped, or if it is a large head, just use about half.
And bag the other half for a yummy side later in the week.
Then add 1 Onion- you guessed it, all chopped up!
Now you have some decisions to make… if you want the soup to taste like regular veggie soup, add 3 cans of regular diced tomatoes or even Italian seasoned tomatoes. I opted to add Chili Ready Tomatoes to add a little warmth and spice to the soup (like a mild chili).
You can also add 3 T Bacon Bits if you’d like, but I skipped that step because I was out of Bacon Bits.
Simmer over low heat for 20 minutes.
This soup is a great for a lunch time warm up with a side sandwich or as a side with dinner. It also freezes well. Mommy score!
Slim Down Veggie Soup
Ingredients
- 4 Cups Broth
- 1 Onion Soup Mix Envelope
- 1/4 t Salt
- 1/4 t Pepper
- 1/4 t Garlic Powder
- 4 Ribs Celery- Chopped
- 2 Carrots- Chopped
- 1 Small Head Cabbage- Chopped
- 1 Onion- Chopped
- 3 Cans 14-15 oz Tomatoes (seasoned or plain)
- 3 T Bacon Bits Optional
Instructions
- Pour broth, onion soup and seasonings in soup pot.
- Add veggies, tomatoes and bacon bits.
- Simmer on low for 20 minutes

Sharing on FB… I make a similar one for detoxing, add peppers (red and green) broccoli, no carrots, spinach, kale, cayenne pepper, farlic and it WORKS!!!!and whatever you can, go with organic. Thanks for sharing with us

Thanks so much for sharing! We don’t do organic here, but I totally love all of your veggie suggestions. I thought about adding some kale… oh but the peppers– especially considering the heat of the chili tomatoes–would be a great addition and garlic too… I see a new recipe developing right here ;)!

I make a similar soup, and when combined with a diet of low-fat veggies, fruits and lean meats, it really works at helping me lose weight. I need to make another pot soon.

Thanks, Cris ! I saw this on Pinterest yesterday, and pinned it, have had the recipe for years, but it is buried in my recipe folder somewhere. Glad it is in the new Gooseberry cookbook ! I hope you have your giveaway soon so I can enter ! ! I am also glad I downloaded your Zip List yesterday, now I have to figure out how to get this recipe in here, cause I decided YESTERDAY to make it and give it another go-round next week. Funny how we were on the same wavelength ! lol.

I love this recipe but cannot make it as my hubby is allergic to tomatoes. I make it for pot lucks and would love to do it for the family any ideas what to substitute for the tomatoes?
