With St. Patrick’s Day approaching you’d think Christmas was right around the bend at our house. Miss Add has been counting down for days!
So when the people at Solo Cups* sent me some of their fun green cups and plates and a bit ‘o spending money, I decided to whip up a batch of our family’s favorite low calorie-high fiber cupcakes to celebrate this fun time of year for Miss Add.
Now my recipe for Chocolate Pumpkin Cupcakes is uber complicated…
It is just one box of chocolate cake mix and one 15 oz can of pumpkin. If you like a little more pumpkin taste, choose the German Chocolate Cake Mix. If you prefer it to be more like an uber chocolaty moist cupcake, make sure to use a Devil’s Food Cake Mix.
Bake ’em up.
Now truth be told, I prefer mine with just a little cream cheese… but Miss Add… She wants some icing.
So I just combined 1 small pack of our favorite pudding with 1 cup of milk and stirred until smooth.
Then I folded in an 8 oz container of Cool Whip.
At this point I added some green food coloring to make things festive and cored out my cupcakes to give them a little more “icing”.
Then I decided to make a spur-o’-the-moment cupcake stand with a green clear Solo cup and two green clear square solo plates.
I just put down a plate and took a couple glue dots and adhered them to the top and bottom of the cup and then stuck another plate on top… Tadah! Instant cupcake stand in a snap!
Cool Whip Icing
Ingredients
- 1 Cup Skim Milk
- 1 Small Sugar Free Fat Free Pudding Mix
- 8 oz Cool Whip Free
Instructions
- Combine milk and mix until smooth.
- Fold in Cool Whip.
