Need a hearty meal that is quick and easy? Let me introduce you to this Easy Peasy Crockpot Lasagna from Gooseberry Patch’s Speedy Slow-Cooker Recipes!

Easy Crockpot Lasagna

Aunt Lou here.

How easy is it? Easy enough that Michael threw it together for me before he went to work.

Remember how I have mentioned that I have a problem with the snooze button? Well, this morning I intended to get up a half hour early to throw this together as I got ready. I really did. And at 5:55 I told myself that I could hit snooze just ONE more time. And that is the last thing I remember until 6:40. I had twenty minutes to get ready and get out the door. Uh-oh. So much for the best laid plans.

So I apologized to Michael and said I would try and make it tomorrow morning. He then asked how hard it was to make. I told him “easy” is in the name of the recipe. How hard could it be?

Turns out the hardest part of the recipe for my technologically challenged husband was finding it on my Kindle Fire!

All I have to say is Good Job Hunny! It is delicious!!!

All you have to do is start some water to boil on the stove and throw your micro-cooker in the microwave with your beef inside. You now have about 5-7 minutes to pick out your outfit for the day, throw on some mascara or start straightening your hair.

Next stir up your beef with your mix ‘n chop and put your beef back in the microwave for a few minutes. Add your noodles to the boiling water (I always throw in a little butter in to make sure they don’t stick) and set your timer for 8 minutes.

You now have 8 minutes to keep on getting ready.

When the timer goes off, drain your noodles.

Now mix the beef and pasta sauce together and put half of it in the bottom of a greased crockpot…next is half your pasta…then half your cottage cheese followed by half of your shredded cheese. Then layer everything in the same order again. Cover it up and set your crockpot on low for 6-7 hours (if you go all the way to 8 hours, the edges get just a little too dark) or on high for 3.

Easy Crockpot Lasagna

Now head off to your busy day and come home to the wonderful smells of a great and filling meal.

Add some garlic bread and salad to your plate and you have one yummy dinner!
