Do you wish you could just wake up and pop a yummy breakfast casserole in the oven some mornings? A homemade breakfast without all the work? You are going to love this make ahead breakfast casserole that has fall written all over it. Pumpkin Pie French Toast is THE perfect overnight casserole for chilly fall mornings (or those mornings we are hoping to turn off a little cooler 😉 ).
We love French Toast and Pumpkin Pie, so it was pretty much a given that we would be a fan of this recipe.
Another sign? It uses Hawaiian Bread– Yum!
The one thing it doesn’t use? Actual pumpkin… instead it uses a healthy dose of Pumpkin Pie Spice. I wondered if it would really taste like pumpkin. Never fear, it did taste like Pumpkin Pie French Toast.
Like I said… it tasted like Pumpkin Pie French Toast… and everyone loved it.
The top was crunchy and sweet. The inside was like bread pudding, but a creamy pumpkin pie flavored bread pudding.
It was fantastic and so easy!
Pumpkin Pie French Toast {Overnight Casserole}
Ingredients
- 1 Loaf Hawaiian Bread- cut into 1 inch slices or cubes
- 3 Eggs- Beaten
- 1/2 Cup- Egg Substitute or two additional beaten eggs
- 1 Cup Half and Half
- 1 1/2 Cup Milk
- 1/4 tsp Salt
- 1 tsp Vanilla
- 1 Tbsp Pumpkin Pie Spice
- 1/2 Cup Brown Sugar-Packed
- 1 Tbsp Butter- Cut Up
Instructions
- Spray 9 x13 pan with cooking spray and place bread in pan.
- Combine remaining ingredients (except butter) in a bowl and pour over bread.
- Cover and refrigerate overnight.
- Dot with butter and bake in at 350 uncovered for 40-45 minutes.
- Serve with syrup.
