Are you looking for a quick and easy way to make one meal into two different meals? This recipe for Beefy Frito Taco Salad uses the leftovers from Slow Cooker Beefy Taco Soup to make a delicious new meal!
So when I had some leftovers from my Slow Cooker Beefy Taco Soup (that I altered from a great recipe in Gooseberry Patch’s Everyday Simple Suppers by using the Veggie Blend-Ins), I decided to throw together a salad for a different meal later that week. The soup was beefy and thick, so it did very well in a salad. You could substitute a taco chili or taco meat for this recipe very easily.
I loved that it was a way to “disguise” leftovers as a completely new meal. Puddie and Miss Add tend to not always be the biggest fans of leftovers. I think the variety food blogging has brought into their lives tends to spoil them a bit ;). So when I can stretch one meal into two and not get called out for left-over night I call that a win!
Beefy Frito Taco Salad
Then I had to make the hard choice that ever taco salad maker must make… Fritos or Doritos. It was a tough choice, but someone had to make it.
Well, on this day I clearly chose Fritos as my chip of choice and truth be told, they were the perfect compliment to the taco soup leftovers.
I simply spooned the thick soup over a bed of lettuce, added my Fritos, a little cheese and some sour cream and a new meal was born!
You could add some corn, tomatoes, avocado, guac or whatever you have on hand to dress this up even further.
Frito Taco Salad
Ingredients
- 6 Cups Lettuce
- 2 Cups Taco Chili Taco Meat or Slow Cooker Beefy Taco Soup
- 1 Cup Shredded Cheese
- 1 Cup Fritos
- Sour Cream to Taste
- Optional: Chopped Tomatoes Avocados, Corn
Instructions
- Divide lettuce onto 4 plates.
- Spoon taco meat or soup on top.
- Add remaining ingredients.
