When I saw this recipe in Gooseberry Patch’s Foolproof Family Recipes I immediately wanted to make it.
Maybe it was a chocolate craving.
Maybe it was nostalgia– Mom would make a big batch before my annual sleepover with my girlfriends.
Maybe it was my sweet tooth calling– it does that 😉
Easy No Bake Cookies
Regardless, I have always loved No Bake Cookies.
My mom has always told the story that one time she actually blew up an oven making NO-bake cookies when she was a kid. She was trying to light the gas oven for the cookies without realizing that no-bake cookies didn’t require an oven!

Most No Bake recipes have similar methods… Typically they all call for you to heat milk, butter, sugars and cocoa powder to a rolling boil and once you remove from the heat, you add in your peanut butter and vanilla. Then that chocolaty peanut-buttery awesomeness all over your oats and stir well. Then scoop out your cookies onto wax paper and wait what feels like forever and a day until they are set up and able to be gobbled up!
Now a lot of folks like to use quick oats, but I prefer to use old fashioned. It is just a personal preference.
The one thing I noticed as a little different in this recipe than others I have tried is that it called for the sauce to boil a full 2 minutes before adding the peanut butter. (It also instructed to add the oats before the peanut butter but truth be told, my old habits kicked in when making it and I totally missed that part of the recipe and added the peanut butter before drizzling over the oats– fear not, the way I ended up making them turned out just fine ;))
Easy No Bake Cookies
Ingredients
- 1/2 Cup Butter
- 2 Cups Sugar
- 1/2 Cup Milk
- 4 Tblsp Baking Cocoa
- 1 tsp Vanilla
- 1/2 Cup Peanut Butter
- 3 Cups Old Fashioned Oats
Instructions
- Add butter, sugar, milk and cocoa to a saucepan and bring to a full boil for 2 minutes.
- Remove from the heat and add peanut butter and vanilla and stir until blended.
- Add oats and stir well.
- Spoon out in heaping tablespoons onto wax paper
