I am admittedly a picky eater. It isn’t something I particularly like about myself, but it is what it is. I am a texture eater with a nasty gag reflex. So I became cautious at a very early age about foods that weren’t pretty simplistic.

Fast forward to today. I am surrounded by fabulous recipes that have more to them than my favorite sandwich (two slices of bread and a slice of cheese…yes, I will forever be a little kid at heart), AND I have a husband that loves food that is full of all kinds of flavors.

So what’s a picky eater to do? Well, she takes a chance every once in a while and it pays off! This Beefy Salsa Rotini is just one of those instances. I loved it, as did Michael and Mr. Ryder…you have to love it when your toddler says, “More Mommy! More!”

We also tried out something new with this recipe. I recently went on a grocery store tour with a registered dietician. She highly recommended whole grains across the board and even gave us a box of whole grain pasta…and wouldn’t you know it was rotini! So, I thought I would give it a try. I had heard some people complain about the taste, so I was a little worried Michael might give me a hard time. Nope! We both agreed that we couldn’t even tell a difference! I don’t know if it was just this Beefy Salsa Rotini or if the pasta just tastes the same, but it is worth a shot if you want to pack a little more nutrient punch to your meal!

Beefy Salsa Rotini

Brown your ground beef and drain.

Cook your rotini according to the package.

Mix together your beef, rotini, soup, salsa, milk and ½ cup of your cheese in a skillet.

Cook over medium heat until everything is heated through and your cheese is ooey gooey perfection (aka melted ;)).

Sprinkle the rest of your shredded cheese on top.

Serve it up with some sour cream and tortilla chips.

Ingredients

  • 1 lb ground beef
  • 8 oz pkg whole grain rotini pasta
  • 1 can 10 ¾ oz tomato soup
  • 1 c salsa
  • ½ c milk
  • 1 c shredded cheddar cheese divided
  • Optional: sour cream tortilla chips

Instructions

  • Brown your ground beef and drain.
  • Cook your rotini according to the package.
  • Mix together your beef, rotini, soup, salsa, milk and ½ cup of your cheese in a skillet.
  • Cook over medium heat until everything is heated through and your cheese melted.
  • Sprinkle the rest of your shredded cheese on top.
  • Serve it up with some sour cream and tortilla chips.
