When Aunt Lou and I were kids we had family friends that would occasionally take us on outings. We just loved going to the zoo or a movie and dinner with them. We of course thought it was all for us, but now as a parent looking back, I am sure Mom and Dad appreciated the date night opportunity.
On one rare occasion, they had us over to spend the night. It was such a big deal to spend the night over at Richard and Betty Jo’s. We had such a big time!
One of the things I always remembered was that Richard fixed macaroni and cheese for us for breakfast! Now that was cool in this kid’s eyes, even if it had ham in it too 😉
This recipe reminds me of that breakfast dish he made us Benefiel girls all those years ago.
Will the Kids Eat It?
If your kiddos are picky about their cheeses, you might start with using their favorite or mixing it half and half with another type of cheese. If it is a dish intended for adults, have fun with it. I could see everything from a Sharp Cheddar to a Swiss to even a Pepper Jack working quite nicely.
This recipe also has sour cream in it and makes the flavor a little less cheesy, so if you want a super cheesy taste, I’d bump up the cheese in this dish by 1/2-1 Cup more than what is listed below.
One more thing? This awesome dish DOES NOT require you to boil the macaroni ahead of time. I just love that.
Ham & Cheese Skillet Recipe
Ham & Cheese Skillet
Ingredients
- 1/4 Cup Onion- Chopped
- 1/3 Cup Green Pepper- Chopped
- 1/4 Cup Butter Melted
- 1 Tbsp Flour
- 1 tsp Salt
- 3 1/2 Cup Milk
- 2 Cups Cooked Ham- Cubed
- 8 oz Macaroni- Uncooked
- 1 Cup Sour Cream or 1/2 Cup Sour Cream and 1/2 Non-fat Plain Greek Yogurt
- 1 Cup Shredded Cheese Swiss, Cheddar, American, etc.
- Salt and pepper to taste
Instructions
- Cook your onion and peppers in the butter until tender.
- Stir in salt and flour.
- Add in milk little by little with a fork or whisk
- Add ham and macaroni.
- Stir constantly while bringing to a boil.
- Cook until macaroni is tender
- Stir in sour cream and cheese to melt (do not boil)

I don’t like sour cream or yogurt. Could I just leave it out? Otherwise, this sounds good. We have chopped red, yellow and orange peppers as I don’t like green. Our grocery usually has them on the ‘going bad’ table for a lot less money then the ones that aren’t. Usually I find one tiny spot that I throw away or sometimes nothing at all. I either make stuffed peppers with them or dice them up and freeze them in a bag. I might just have to try this recipe!
