And as an added bonus, besides all of the wonderful recipes, I found myself eating up the ways Christy shows the reader how to add little things to make a meal complete – from 10 minute rolls to a side of simple skillet veggies to easy ways to make pantry staples.
I feel like she has given me an arsenal of quick fixes that encourage me to make meals I am proud to serve my family.
White Chocolate Cranberry Cookie Bars
Which brings me back to the White Chocolate Cranberry Cookie Bars I made for dessert the other night. Christy’s Easy Tender Cookie Bars on page 250 were the perfect inspiration for a cookie bar treat with one of my favorite cookie flavors.
You know me… I will grab any chance I can to use my favorite Brownie Pan! And these? Perfection!
I have always been a big fan of white chocolate and dried cranberries together, so I took Christy’s recipe and tweaked it a wee bit and a new family favorite was born!
Christy also offers a lot of variations in her cookbook of how to make these bars your own: M &M Cookie Bars, Oatmeal Raisin Scotchies, Pecan Bars, Oatmeal Cranberry Bars and this festive fall adaptation on her blog that Miss Add would go nuts over (she is a bit candy corn crazy 😉 ). Puddie and I have brainstormed all kinds of flavor combinations and can’t wait to try them out this holiday season.
White Chocolate Cranberry Cookie Bars
Ingredients
- 1/2 Cup Old Fashioned Oats
- 1 Cup Packed Brown Sugar
- 2 Cups Bisquick
- 1 Large Egg
- 1 Stick of Butter- Melted and Cooled Slightly
- 1 tsp Pure Almond Extract original called for Pure Vanilla Extract
- 1/2 Cup Dried Cranberries
- 2/3 Cup White Chocolate Chips
Instructions
- Preheat oven to 350
- Coat Brownie Pan or 8 x8 pan with cooking spray.
- Combine dry ingredients except white chocolate and cranberries
- Add egg, extract and butter.
- Mix in white chocolate and cranberries.
- Press dough into pan.
- Bake for 25-30 minutes until golden.
- Let cool for 15-20 minutes.
- Cut into bars.
