Last week a friend of mine called me up and needed a last minute baby sitter for her 12 and 7 year old boys. So I had to think beyond my “Ryder box” for lunch.
I happened to be browsing around on Goodeness Gracious and ran across these Corn Dog Muffins that Cris had whipped up and thought I would put a little twist on them. I made them up with some sausage links instead of hot dogs and sprinkled them with cheese. Voila! Yummy central!
The boys gobbled them right up! And Michael and I might have enjoyed a few ourselves! Now Ryder is still too little for hot dogs/sausage links, but he enjoyed the corn muffin with cheese and was none the wiser. 🙂
I followed Cris’ lead on using my favorite muffin mix. Mine happens to be Jiffy, so instead of one bag, it was two boxes, but it made these Cheesy Corn Dog Muffins super simple nonetheless!
Cheesy Corn Dog Muffins
Preheat the oven to the temperature your corn bread mix package calls for.
Mix together your favorite corn bread muffin mix per the instructions on the package.
Then cut up your sausage links into small pieces.
Spray your muffin tin with cooking spray.
Pour the batter into the muffin cups.
Place sausage pieces in batter.
Sprinkle cheese on top of each muffin.
Bake according to corn break mix package.
The cheese will crisp up and turn golden when they are done.
Serve these up with whatever your favorite condiments are for corn dogs and enjoy!
If you have kids that enjoy being in the kitchen, I would definitely let them pitch in on this recipe. I can’t wait until Ryder is big enough to help!

- 1 pkg of sausage links
- 2 boxes of Jiffy corn bread mix or your favorite corn bread mix
- 1 c of favorite shredded cheese
Instructions

I made these for dinner last night. They are delicious! Another “why didn’t I think of this”! I used Jiffy cornbread mix and turkey hot dogs (and cheese). I didn’t spray my muffin pan well enough and they stuck a little, next time I’ll put parchment paper in the cups. Also, I’ll make 15 instead of 12 and cut the hot dogs smaller. Another home run! Thanks for the great recipes!
