Fresh corn on the cob, tomatoes, avocado, garlic, lime and basil come together in this amazing Summer Corn Salad recipe. It is a MUST have at our dinner table all summer long!
This recipe is one of my all time favorites. We have made it for years. We look forward to it every summer and we even fake it in the winter sometimes 😉 with frozen corn and the tomatoes that are available that time of year.
BUT the very best time of year to have it is when the sweet corn is sugary sweet, the basil is freshly snipped and the tomatoes are red on the vine.
And tis summer! So I am so excited to share it with you– and let you know it can be found in the new Gooseberry Patch Cookbook, Foolproof Family Recipes :).
This dish is a bit different from the Cilantro Corn Salad I shared a few years ago. The creamy avocado and basil are just perfect with the hint of lime in this Summer Corn Salad. Despite them being different, I still cook up my corn the same way 😉
Enjoy!
