Many folks are intimidated by the kitchen, thinking that an impressive meal or most importantly– a good (GOODe) tasting meal– has to be difficult to be great.
Baloney. (No, I am not saying bologna is the answer 😉 ).
Ya see, around here we like the terms easy, quick and simple and if it takes four hours to make, it better be in a crock pot… just sayin’.
That is probably why I have been obsessed with the new Gooseberry Patch Cookbook: Everyday Simple Suppers. GP sent me a copy (and one for one lucky reader) a few weeks ago and I have been cooking from it constantly ever since!
There are 260 recipes in this book and from the looks of all my tabs, I am set to make at least half of them! Truth be told, Puddie used an ENTIRE tab pad marking the dishes he wanted me to make!
It isn’t his fault really, this cookbook really is chock-full of great recipes and with chapters like these (below), I don’t mind giving them a try in the kitchen.

If this book looks a little familiar, it could be because I have already been teasing you with recipes from its pages 😉
I found the original version of Meatball Noodle Bake in the Pronto Pizza and Pasta section of the cookbook. I was intrigued by this new recipe and concept, so I thought it might be hit or miss, but it passed with flying colors at the Goode house! This is the perfect recipe to mix up a menu if you have been feeling like you have been eating the same thing over and over.
I also found these Pita Pizzas in the same section (can you tell I like to hang out on those pages ;)).
A version of this Tuscan Pork Roast can be found in the Farmers’ Market Favorites section… and by version, I mean the correct version 😉 If you haven’t read all about my silly mistake when making this, you really should… it will give you a chuckle.
The rock star recipe so far has been this Pizza Skillet Bake that I lightened up from the recipe found in the Sizzling Skillet Suppers section.
I have found so many awesome recipes, I thought it might be fun to do what we did back with Crock Pot Week a while back and have a Simple Suppers Week!
So later today I will share this yummy Ham & Cheese Skillet (also from the Sizzling Skillet Suppers section). This skillet reminds me of a mac and cheese all grown up.
On Wednesday we will dive into a bowl of Chicken Lo Mein from the Farmers’ Market Favorites chapter. I adored this recipe. I oftentimes think that a lot of Chinese inspired dishes that have been Americanized are way too salty. This dish allowed me to pull back on the salt and let the fresh flavors shine through. (Psst… if you prefer the salty taste like Puddie, a little bit of extra soy sauce does the trick.)
On Thursday we will have breakfast for dinner like we did the other night when I served up these yummy Maple Ham & Egg Cups. Miss Add is still requesting these and I don’t blame her!
On Friday we will feast together on another one of Miss Add’s favorites, Slow Cooker Chicken Stuffing Casserole from the One- Dish Wonders section. Miss Add says this tastes like “chicken with stuffing dumplins” and ya know, I think she is right. It is a nice hearty dish and will be great this fall.
On Saturday I will share this super easy Chicken Pot Pie that I adapted from the Turkey Pot Pie found in the One-Dish Wonders section. Aunt Lou was visiting when I first served this and scoffed that she could never make such a pretty pie crust… and then I let her in on my secret… tune in on Saturday and I might just share it with you as well!
Last but not least, we are going to end on a sweet note on Sunday with these fantastic Homemade Peanut Butter Cookies from their Short & Sweet Desserts section. With only 4 ingredients, these Peanut Butter Cookies are going to be a staple for a quick dessert when company drops by! I made a double batch last weekend and everyone loved them.
