2 14.5ozCans Diced Tomatoes with BasilGarlic and Oregano
1tspItalian Seasoning
Salt to Taste
16ozTraditional Lasagna Noodles- Cooked & Drained
15ozCottage Cheese
1lbSausage- Browned and Drained
14ozCanned Mushrooms- Drained
3CupsShredded Mozzarella
1/2CupShredded Parm
Instructions
Preheat broiler.
Boil and drain noodles.
Meanwhile brown sausage.
Place water, tomatoes, seasonings and mushrooms in a sauce pan and simmer.
When noodles are done, drain and combine all ingredients except 2 cups of mozzarella and the parm in a pot and heat through.
Pour mixture into a lasagna pan and top with remaining cheese.
Broil for 1-5 minutes until cheese is golden.
Spoon out portions or save until next day and slice and serve like regular lasagna.
Notes
Note of Caution: Watch that broiler folks... it is like magic. It could take as little as a minute to get that cheese all nice and golden and 5 minutes could be perfect or burnt to a crisp. So keep a very close eye on it.
