I don’t like salad. There I said it. I know it is good for me. I know I am a bad example. I know, I know. However, put a little of this stuff on some greens and sign me up! It is hands down my favorite dressing. I love the tartness of the balsamic vinegar and the bite of the garlic. I could put this dressing on anything really. Potatoes- yum! Whole green beans- oh yeah! Chicken- my heavens yes! BUT, in an effort to eat more greens, I try to make sure I using a nice spring mix salad as my vehicle of choice for this delicious dressing. I found this yummy spin on my favorite homemade dressing in Gooseberry Patch’s Good-for-You Everyday Meals Cookbook. It is the fifth amazing recipe I have found in that gem of a cookbook! Garlic Secret
One other note… Do you love garlic but HATE mincing it? I have stumbled upon my favorite solution yet… Freeze Dried Garlic! It will change your life. Just a little liquid and those minced chunks plump right back up and pack a powerful punch to dressings like this or some ground beef or any veggie dish. I may or may not have a problem… I am adding it to everything! But hey, the vampires are staying far away these days!
Homemade Balsamic Vinaigrette Salad Dressing
Back to the super yummy dressing. It is uber simple to make. Toss everything into a mason jar and shake. It stores at room temperature for up to a month, if you can get it to last that long 😉
And, it doesn’t take fifty million billion ingredients either. A few items from your spice cabinet, some extra-virgin olive oil and some balsamic vinegar and yum you are done!
Homemade Balsamic Vinaigrette Salad Dressing
Ingredients
- 1 1/3 Cups Extra Virgin Olive Oil
- 1 Cup Balsamic Vinegar
- 4 Cloves Garlic- Minced or 1 tsp Freeze Dried
- 4 Tblsp Dried Parsley
- 4 tsp Dried Basil
- 4 tsp Dried Minced Onion
- 2 tsp Salt
Instructions
- Combine everything in a pint jar.
- Screw on lid and shake well.
- Stores at room temperature for up to a month. Shake before serving.

I love vinaigrettes so much! I’ll definitely try this one! Usually I go grab one of those marinade packets for whatever flavor i’m feeling like. I prefer the garlic onion ones. I’ll mix one of those with rice vinegar, red wine vinegar, and balsamic, with a bit of toasted garlic. It’s to die for! I put it in a water bottle, so that I can shake and pour it easier. Thanks for the recipe!!

Hi CRis, I just made this vinegrette and did not read your directions and other info until I was done. Since you like freeze dried garlic so much, I want to tell you about my favorite. It is roasted minced garlic (dried) from Spice Barn. I use it quite a lot, so I buy it in a larger size to refill my small bottle for the drawer. I also love their dried roasted garlic powder.
Just wanted to let you know. Thank you for the recipe. I made it to marinate some asparagus I steamed. Should be wonderful!
