Cheesy Sausage Egg Skillet is one of our favorite meals around here. We all love the taste, and I love how quick and easy it is to make.
Ryder is a tricky one when it comes to eating. Even on the days when he is eating like a hoss, he won’t always eat what we put in front of him. Well today he followed me over to where I was taking my pictures and kept saying “Mmmmmm, Mommy! Mmmmmm! Eat that! Eat that!” (“Eat that” is his version of “That is what I will eat” )
And eat that he did! I barely got to take a bite before he was asking for his next bite!
Cheesy Sausage Egg Skillet
Start by preparing your sausage. You can fry it up on the stove or in the microwave with a micro-cooker…whichever is your preference…and make sure it is really broke apart.
I always use medium pork sausage from The Pork Shoppe for this recipe. It is ah-mazing! Heather Hill and her family actually raise this pork. If you are in Indiana, you must try their sausage. You will never want to have any other kind. It has become a staple in our house.
Once you are pretty close to having your sausage done, coat a large skillet with cooking spray and turn the heat on medium-high to high heat.
While your skillet is warming up, beat your eggs until they are nice and scrambled.
Pour your eggs in to the hot skillet and get to work. The eggs that hit the skillet first will instantly turn white and form a thin solid layer. You will want to stir/scrape this up and keep doing it continually. It will result in very fluffy eggs. Just keep going. Don’t stop for a second. They will be done in just a few minutes.
Michael and I both love fluffy eggs and he was amazed the first time I made them for him. He is more of a low and slow guy, while I make everything I can on the stove high and fast (especially since trying to learn how to cook on a gas stove…this girl does NOT have it down even after a few years…I liked my clearly marked low-medium-high dials on my electric stove and miss them dearly! 😉 ). He didn’t believe me when I said that I could have eggs done in under 5 minutes and that they were fluffy. Welp, now he’s a believer. 🙂
I had no idea that this wasn’t how everyone did their eggs. Michael informed me that he had tried for years to get fluffy eggs at home, but had always been unsuccessful. It is so quick and so very easy…that I had to share it with y’all!
Once your eggs are completely done, reduce your heat and stir in your sausage until it is mixed well.
Throw your cheese on top and stir it in.
Turn off your heat and serve it up! We love to have this Cheesy Sausage Egg Skillet with a side of biscuits and big ol’ glasses of milk.
Cheesy Sausage Egg Skillet
Ingredients
- 6 eggs
- 1 lb medium pork sausage
- 3/4 c shredded cheese
Instructions
- Cook sausage and crumble
- Spray large skillet with cooking spray and turn on medium-high to high heat
- Whisk 6 eggs until well scrambled
- Pour eggs into hot skillet
- Immediately start stirring/scraping eggs off of bottom and sides of skillet
- Keep eggs moving until fluffy
- Reduce heat
- Add sausage and combine thoroughly
- Add cheese and stir until melted
- Turn off heat and serve
