This Chicken & Asparagus Penne recipe is easy to make and so good! We adapted this recipe from Gooseberry Patch’s Meal in Minutes.
Dear Reader,
I must confess… I totally heart pasta… macaroni, spaghetti, penne, angel hair, fettuccine… you name it, I love it.
That is why I adore Smart Taste pasta that takes my typical carb splurge and gives me the fiber of whole wheat pasta with the taste of white pasta.
So, when I saw this recipe for Chicken and Bowties in the Oodles of Noodles section of Gooseberry Patch’s Meals in Minutes, I knew I had to give it a try.

I tweaked the steps in this recipe… to make it even more time-saving.
I popped a couple of the steamable bags of Asparagus spears from Birds Eye’s Steamfresh line in the microwave. (LOVE Steamfresh BTW…)
Meanwhile, I boiled up a box (12 oz) of Smart Taste Penne (Smart Taste doesn’t come in Bowties at my store).
I also got to cookin’ up 1lb of chicken breast in a non-stick skillet seasoned with a little Lawry’s.
Take the asparagus and place in the bottom of a 9 x 13 pan.
You might want to chop up the spears, I left mine whole… which lead to interesting references to Junior’s family and what order we should eat them in with my Veggie Tales fan…
Add your pasta
Drizzle with 1/4 cup of olive oil
Add chicken and stir it up a bit to coat everything.
Sprinkle with 1/2 cup of shredded Parmesan and pop under your broiler for 5 minutes to get it nice and crunchy.
Another keeper! And, I bet it would freeze well…
Next time I whip it up, I am making a double batch and throwing one in the freezer.

Chicken & Asparagus Penne
Ingredients
- 1 lb Asparagus- Steamed
- 12 oz Smart Taste Penne- Cooked
- 1/4 Cup Olive Oil
- 1 lb Chicken Breast- Cubed and Cooked
- 1/2 Cup Shredded Parmesan
Instructions
- Add all ingredients into a 9 x13 pan and stir to combine.
- Top with Cheese and Broil for 5 minutes or until cheese is golden.

I added sauteed mushrooms and it turned out great! Love it when my 2 year old asks for more asparagus and mushrooms!

I just went to the store and bought all of the ingredients to make this!! Can’t wait… for some reason I’m thinking about adding lemon somewhere in there! Either way it looks delicious!

Just finished eating this and might I add it’s rather delicious.I used regular penne noodles and steamed some fresh asparagus. I will be making this again but I might add a little alfredo sauce (sister complained it was too dry)

I sauteed onion and mushrooms,added fresh chopped asparagus for few minutes to it,than the cooked chicken,than combined all…yummy…my 3 year old loves pasta anything,and vegies so this is right up her taste.

I sauteed the asparagus in olive oil with fresh mushrooms and garlic and added a little bit of Alfredo and omitted the chicken so I could use it for a side dish and it was amazing!
