Dear Reader-
The very first recipe I was inspired to make was after seeing The Blue Ribbon Corn Dog Bake in 101 Cozy Casseroles.
Psst… Have you entered to win?
I recalled seeing pins all over Pinterest about how moms were making corn dogs into muffins…
So, that is what I did the other day and Miss Add hasn’t stopped requesting them!
Confession Time: I totally took the idea from the recipe… but TOTALLY cheated.
Ya see I love, love, LOVE Marie Calendar’s corn bread mix… haven’t really found a corn bread recipe out there that I like better…
So, I totally cheated with it.
Which means that this lovely recipe is literally 3 steps… Mix, dunk, bake!
Prepare mix and pour into greased muffin tins.
Cut up your franks and dunk them in each cup…
Next time, I think I might put the hot dog pieces in first and THEN add the batter to make less mess.
*Edited to add: A reader let me know that putting the hot dogs in first made the muffins too heavy on bottom and they would rip apart… so you need to do batter first.
Pop in the oven and bake at 350 until golden.
Mine took around 15 minutes.
Serve up with ketchup or mustard… whatever your Monkey prefers 😉
