This week our small group decided to have everyone bring a “tailgate food” instead of one person taking care of the main dish. As everyone was emailing back and forth what yummy deliciousness they were going to bring, I had no idea what to bring. I wanted to try something new, but it had to be something that would be a favorite (all of the traditional favorites were already taken by the time I got around to figuring my dish out…big surprise! lol).
Well, these Mini Cheesecakes did the trick. One of my friends peeked into my basket to see what I had brought and after confirming that it was indeed cheesecake, she professed her love for me right then and there. 🙂
They were so simple to make too! We have such a large group that I had to make a double batch. And even though I couldn’t find my second muffin tin and had to do two rounds in the oven, it still was a snap!
Another cool thing about this recipe is that you can make it as versatile as you want! If you want plain cheesecake, have at it! If you want cherry cheesecake, done! If you want to change it up and do strawberry instead, feel free! You can get as many or as few toppings as you want!
Mini Cheesecakes
Preheat your oven to 325.
Place one foil muffin cup in each place of your muffin tin.
Place one vanilla wafer in the bottom of each muffin cup.
Beat together your cream cheese, sugar and vanilla with an electric mixer until smooth and slightly fluffy.
Add one egg at a time, beating until mixed well.
Spoon mixture into each muffin cup, filling them approximately 3/4 of the way full.
Bake for 25 minutes, turning the pan at 10 minutes.
Top with desired topping or not at all and enjoy!

- 12 vanilla wafers
- 2 8- oz pkgs of cream cheese softened
- 1/2 c sugar
- 1 t vanilla extract
- 2 eggs

I made mini cheesecakes for a potluck last night. Except, I cheated and used the no bake cheesecake from a box! Still yummy!
