This Tomato Soup recipe is a great way to make a simple can of soup into a great meal for the family that bursts with flavor. Pair with a grilled cheese and you have the perfect comfort food for a cold winter’s day.
But the temperature makes no difference to Miss Add who is busy preparing for her day in the snow as I am preparing for those warm comfy meals that will warm her and Daddy up when they come back in from a fun-filled afternoon in our backyard which conveniently comes with it’s very own massive sledding hill.
One of our family favorites is a nice bowl of Tomato Soup and a ooey gooey Grilled Cheese to go with it. For years I have bought the Progresso soups in an effort to give our bowls a bit of a more grown up taste (or in other words, Mommy really likes basil and wanted a bit more flavorful soup).
But then I came across this recipe for Pesto Tomato Soup in Gooseberry Patch’s Gifts from the Kitchen and we are head over heels for it!
Pesto Tomato Soup
This Tomato Soup recipe starts out with a regular 10 3/4 oz can of Tomato Soup (I used Campbells) and you add a can of tomatoes. It calls for a 10 oz can of Fire Roasted Tomatoes, but I use my very favorite addiction canned tomatoes, Red Gold’s Basil, Garlic & Oregano Diced Tomatoes (14.5 oz).
To that I added 1 Cup of Milk and 3 T of my favorite Pesto Sauce.
You heat them together and then if you want (we did) you use an immersion blender to make the soup a bit more smooth.
Soo super simple.
Sure, the steps take a bit more than just heating up a can in the microwave, but not by much. It really only takes about 15 minutes to throw together and your family will never imagine the resulting soup started out as a plain old can of soup!
Pesto Tomato Soup
Ingredients
- 14 1/2 oz Can Red Gold Basil Garlic and Oregano Diced Tomatoes
- 10 3/4 oz Can Condensed Tomato Soup
- 1 Cup Milk
- 3 Tbsp Pesto Sauce
Instructions
- Mix ingredients well in a sauce pan and heat through.
- Use an immersion blender to blend soup smooth
