I had quite a few visitors yesterday. It happens when you have a baby. We had seriously only had a couple of visitors to our house in the first year of our marriage. In the last two month since Ryder has arrived, I honestly couldn’t tell you how many visitors we have had. And we love it!
The last visitors we had was a very good friend of mine and her three little ones. Her youngest is 8 days younger than Ryder, so we plan on having lots of fun raising our boys together. During our visit, she asked what we were having for dinner.
Dinner?
Oh no!
It was 4:30, and I hadn’t even had the first thought about what we would have. (I had been a bit distracted all day with our company and a certain cutie.)
Well, my friend came through with one of her favorite quick fix meals, and I must pass it along to you! This will be a go to meal in our house from now on!
Quick & Easy Pulled Chicken BBQ
I started with a pot of water and 5 frozen chicken breast (I was skeptical that I could add the chicken before the water started boiling or add it frozen, but it worked AND that means I could throw it on and go nurse Ryder while it did it’s thing…perfect!)
Brought that to a boil
I gave it about 10 minutes once it started boiling and checked to see if it was done and checked it every couple minutes until it was done. Then I drained the water off and shredded the chicken.
Next comes the BBQ sauce. We happen to have Sweet Baby Ray’s in the cabinet, so that is what I used.
When mixing the chicken with the sauce, I went ahead and put it in the container I would refrigerate the leftovers in. That means one less dish that I have to wash. It makes sense to me.
Then serve it up on a bun! Around here, adding light ranch dressing is a must. The combination of flavors is YUMMY!
Supper was ready in plenty of time with ingredients we already had on hand and was delicious! Mommy score!
Quick & Easy Pulled Chicken BBQ
Ingredients
- 5 Chicken Breast
- 3/4 Bottle of BBQ Sauce of choice
- Hamburger Buns
Instructions
- Bring the chicken breast to a boil and cook thoroughly.
- Drain chicken and shred.
- Add BBQ sauce to chicken and blend.
- Serve on hamburger buns.
