I know, I know… believe me, I didn’t believe it either when I first saw it used in the original recipe years ago that I later altered a wee bit.
So when the good people at the National Soyfoods Association told me that April was SoyFoods Month and asked me to whip up something yummy I knew exactly what I was going to make. In fact this pudding is Puddie’s absolute favorite. He asks me to make it all the time.
Truth be told, I was really excited to have the opportunity to highlight National Soyfoods Month as I work with Soybean farmers everyday. Did you know that Indiana ranks 4th in the nation for soybeans?
Like a lot of meat eaters, it took me a while to figure out that soyfoods aren’t just for vegetarians…
Nowadays we eat 3 soyfoods regularly around here and don’t think twice.
- Tofu can be used in a lot of desserts as a great thickener that packs a protein punch.
- Soynuts are a yummy satisfying low cal snack that I like to throw in my purse.
- Edamame is a great veggie to plate next to a steak or chop as a side dish.
