This recipe is one of my all time favorites. We have made it for years. We look forward to it every summer and we even fake it in the winter sometimes 😉 with frozen corn and the tomatoes that are available that time of year.
BUT the very best time of year to have it is when the sweet corn is sugary sweet and the tomatoes are red on the vine.

Summer Corn Salad

This dish is a bit different from the Cilantro Corn Salad I shared the other day. The creamy avocado and basil are just perfect with the hint of lime in this Summer Corn Salad. Despite them being different, I still cook up my corn the same way 😉
And now I have this lovely tool to help me get the silks off the corn which makes things even easier before using this tool to get it all off the cob.
Summer Corn Salad
Ingredients
- 4 Ears of Corn- Cooked and Cut Off the Cob
- 1 Avocado- Pitted and Chopped
- 4 Tomatoes- Chopped
- 1/4 Cup Fresh Basil- Chopped
- 4 Cloves Garlic- Minced
- Juice of 2 Limes
Instructions
- Combine all ingredients gently.
- Serve immediately.
