Today I thought I’d share THE recipe my niece requests all summer long. Cucumber Salad is a super easy old-fashioned recipe with simple ingredients that you can adjust in quantity and taste until your heart’s content!
Summer is in full swing around here, so that means I spend a lot of time at camp.
And, when I am at camp, my niece LOVES when I bring out my grandma’s refrigerator pickles!
Now I have adjusted my grandma’s recipe, because we both love our Cucumber Salad a bit more sour than sweet. But you can make it whichever way you want.
Grandma’s original recipe was 1 part vinegar, 2 parts sweet (sugar or sugar substitute) and 3 parts water. If you don’t know how strong you want your pickles, you could always start there.
However, we flip the water and vinegar to make it sour. Yum!
Cucumber Salad
Ingredients
- 2 cucumbers peeled and sliced
- 1/2 cup onion slices or a bunch of green onions chopped
- 1 cup vinegar
- 1/2 cup sugar or sugar substitute
- 1/4 cup cold water
- salt and pepper to taste
Instructions
- Mix together 1 cup vinegar, 1/2 cup sugar and 1/4 cup cold water in a large serving dish.
- Add in 2 cucumbers (peeled and sliced) and 1/2 cup onion slices
- salt and pepper to taste and refrigerate until serving.
